NINE ELMS No.18 Mulled Wine
- 1 bottle NINE ELMS No.18
- 5ml fresh ginger juice/crushed ginger
- 1 whole dried chipotle, ancho or mulato chilli
- 1 cinnamon stick
- 2 whole star anise
- 7 whole dried allspice berries
- 3 cloves
- 30-60g light brown sugar
- Orange peel

Make an incision in the chilli so that its smoky heat can mingle with the liquid, and then place all the ingredients into a heavy based saucepan.
Gentle bring to a simmer, stirring occassionally. Then leave to simmer for 20 minutes or so to allow all the delicious flavours to infuse. Feel free to remove the chilli at any point to reduce the intensity of its heat.
Ladle into heat proof glasses and garnish with an orange twist.
